Ooooh Pioneer Woman! How I love thee.

I'll be making this recipe for dinner soon. Probably not tonight since I have a full night of sparkly vampires to get ready for! (Eclipse! Midnight showing baby!) I was feeling in a bit of a cooking slump lately and got a few rec's to check out The Pioneer Woman. I already knew her site & have read so many of her recipes, but I never thought to make any. ??? I don't know, I think I was ignoring them thinking that they were all going to be a bajillion calories.
